Can I use national book tokens (UK) to buy an ebook in the apple books app? If so, how?
I can’t work out if this is possible, or see any way to do it, but I thought it was worth asking. Thank you to anyone who might be able to help me! =)

You can't, the only gift cards that you can can use are Apple's own cards (e.g. iTunes, App Store), not those from other stores/companies.

Unfortunately not, which is a real shame given the scheme's incentive to raise reading standards. Apple accepting these tokens would be a powerful gesture of goodwill, backing up their intent to support learning at a young age (their iPad at schools scheme, whilst not without its worries, is largely a good thing)
Blackwells DO allow you to redeem National Book Tokens, but unfortunately you'll need to read them not on Apple's native Book app, but by way of a third party app. I am told "Bluefire" is excellent, and worth the one-off £3.99 cost (albeit there are likely to be multiple free 'reader apps' out there too, but no doubt featuring ads!) See Blackwell's site: https://blackwells.co.uk/bookshop/home . Just search for the name of the book you fancy, and you'll see in their "Format" tab whether or not it's available as an eBook (most are)
It's a shame that Apple's DRM software constraints won't allow you to view a book paid for and downloaded in the very format their Book app supports! Hopefully that will change
