Won't let me add music to iphone

I have friends who make amazing covers or music in general and before I could download their work and just drop it into my phone but now its like my phone isn't recognizing the mp3 and sometimes when that happens, i convert it to an AAC file and usually that lets me add it to my phone but it's not even doing that anymore. And when I go online to find advice it keeps pointing me towards Apple Music.

Is iTunes FORCING me to subscribe to Apple Music in order for me to add music to my phone!?

Example of status my devices

Mac Book Air Retina 13" macOS Catalina 10.15.1
iPhone SE with iOS 13.3 :- Does not use iCloud Library
iPhone 6 with iOS 12.4.4 :- use iCloud Music Library

This is two a Step Process (To sync music from this computer, turn off Cloud Music Library)

Apple Music: Import music (MP3) to Apple Music Library on Mac
Finder: Sync between Apple Music on Mac and iPhone

the only way to add music to the build in music app is to sync it from itunes, if you wish to add music in other ways you have to resort to other players, it's always been that way with ios based devices.

In past years, if you have the manual add and remove music/video/etc you can customize your phone however you want. It still has that option available. However it's not letting me click and drag the music in itunes onto my phone. Even in the finder it's not letting me do that.

So yes, you can manually add and remove music as I have been doing ever since I've had an ipod.

Also, I don’t sync my phone as I like to manually add my own music, videos, etc and be able to adjust things on my own.

Unfortunately the GIF is too fast for me to follow but from what I could catch, it still has the sync button enabled and I don't want to have that checked marked as I found it annoying and would sometimes delete music and videos when they were still in my library. So I want to avoid that as possible, hence why I have the Manually add and remove option enabled.
