I accidentally erased all documents in my iCloud how do I get them back?

Go to both your Desktop and Documents folders on iCloud Drive. In each, find Recently Deleted near the bottom right of your screen. You can recover your erased documents from there. Once recovered, you can download them to you Mac using Archive or make copies of the information you store in iCloud - Apple Support
