Finder not working on new macOS Catalina
Ever since I updated my mac it keeps saying that Finder quit unexpectedly, even restarting, going in safe mode and deleting the p.list doesn't help

You do not say what exact Mac /model /year /size /retina /touchbar is this
or what exact macOS you are currently running?
Updated from what to what or was this a full upgrade of the macOS.
Hmmm surprising, SafeBoot was a noble effort.
Did you try simply relaunching the Finder on the fly.
From the >ForceQuit>Finder>Relaunch
if no resolve—
If you where on Catalina 10.15.0 + and updated try reinstalling the Combo update on top of your existing macOS 10.15.3
Combo update macOS 10.15.3 https://support.apple.com/kb/DL2030
If you upgrade from an older macOS to the new macOS Catalina— reinstall the macOS on top of your existing macOS form Recovery to sort your issue. You have options here so choose wisely, you want to preserve your user data; a simply refresh your macOS on top of your existing macOS.
