Can one turn pages instead of scrolling in iBooks?

I would like to be able to turn pages when I read, as one can in Kindle, rather than having to scroll. Is that a setting I can change?

Open a book and tap AA to turn off scrolling view.

How do I go to the next page in Books without the sliding animation bit? I'm reading a book on the mac. I press the R arrow key to go to the next page. I get a slide show. Pages 11 Inspector Control (side panel) I wish to know how to open a document in Pages without the side panel/Inspector opening. How can I toggle it off so that when I open a document it does not automatically open.
