In your menu be sure to check out Help > Numbers Help. Also Help > Formulas and Functions Help (though you'll already be familiar with most of these from Excel).
One of the best ways to get a feel for the "Numbers approach" and how it can differ from Excel is to study the templates at File > New in your menu. They provide excellent examples of how to set up documents in Numbers and take advantage of the ability to have multiple tables on one page. In Excel you have one big grid of cells on a sheet. In Numbers a sheet is a blank canvas on which you place tables, each of which has a grid of cells.
If you like to refer to books you can check out https://www.takecontrolbooks.com/numbers/. I don't have the book but have heard others say it is useful.
