after using the I tunes for years I have an amount of cashes in the ~/Library/Caches/com.apple.itunes folder.
is it safety to delete them directly from the folder or even to delete the folder (com.apple.itunes and com.apple.music) itself?

It is safe to delete that folder, but many of the files will return after relaunching iTunes or Music, depending on your macOS version. Unless your Mac has very little storage space remaining, I would recommend leaving the Music cache as is.
