Logic keeps crashing

Nightmare, I guess it will be to do with Catalina, so many reports on here.

I am about to order a brand new iMac too, but I have arranged for Mojave to be installed because of the Catalina problems.

Maybe someone on here can suggest something after reading your crash log, it may not be Catalina

From the crash log it seems this project uses a lot of third party plugins. Are they all up to date and compatible? Same problem with a new and clean project?

"it still crashes all the time." So it happened before the new iMac. What make you think a new computer can solve the problem?
