How do i restore notes from a timemachine backup?
I seem to have inadvertently erased the contents in one of my notes. is it in Time Machine? If so how do I get it back?
I seem to have lost just the contents so it's not in Recently Deleted.

Oh I agree, very little is intuitive anymore, & you won't catch me trusting iCloud for anything at all.
In Finder\s Go Menu>Goto Folder, enter this...
~/Library/Containers/com.apple.Notes/Data/Library/Notes/
Then in your top Menu bar for TM choose Enter Time Machine.

Having the iteration in iCloud override my restored one ...or erase it. Still not exactly sure what happened.
Finding the appropriate file to restore.
Admittedly I'm something of a neophyte where using Time Machine is concerned but it wasn't all that intuitive.
I suspect you'd negotiate tothisin the Fonder, then enter Time Machine...
