Camera: Outside The Frame

I have my Camera setting to "Photos Capture Outside The Frame".

Problem is, they don't - when taking a picture I can see what I'm looking at edge to edge (the slightly darker bits in pic below) but when the photo is taken it is cut off where these darker edges are.

My problem is similar but different. When I'm framing a pic, I don't see the "outside the frame" bits on my screen. I would like to see that, so that if I can get a different (better) shot by moving the camera slightly to capture a different part of the scene, I could do it. But this doesn't appear. The only way I can find to change this is to change my photo aspect to 16:9 but then that gives me a lot of junk in the actual photos. I just want the screen (viewfinder) to show me a full screen's worth of content so I can compose my shots better. Can't find anything in Camera Settings or in the camera app itself. 11 Pro Max.
