In the watch app on the phone tap on workout and then tap on workout view make sure multiple metrics is turned on then tap on outdoor cycle and here you can add and remove up to 5 different metrics including active calories.

I biked for 2 hours yesterday with an average speed of 7mph and it showed I only burned 379 calories. That just did not seem right. unless there is something else going on.

No you can only add a maximum of 5 metrics at one time.
