Default email on ipad
How does one set the default email on the latest version of iOS on iPad. I can’t believe Apple would leave that ability out on their latest OS.

Yes, if you have multiple email accounts configured on your device, you can set a default account:
Settings > Mail > Default Account
I hope this fully resolves any issue that you may have.
Scroll to the very bottom of the list of Mail options - where you will find an entire section entitled Composing - the very last item of which is Default Account.

One other question - perhaps obvious - but has to be asked. Do actually have more than one email account configured in Settings > Passwords & Accounts?
Yes, well, I have 1 email and 3 aliases. The iPad wants to use the real email as the default. I can change it in email on my iPad but I want it to default to one of the alias. This works fine on my Mac. And yes, my iPad is running 13.3.1
You can only assign a default to a primary email address that has its own mailbox entry in Settings > Passwords & Accounts.
If the aliases are not independent of the primary email address, but are instead aliases assigned by your email provider, then you’ll not be able to set the default to an alias. All email is transmitted from - and received to - the “real” email address. This may differ from something that you can otherwise achieve with the webmail editor (or Mail App) that provided by your email provider/ISP.
I hope this clarifies what can, and can’t, be done with the Mail settings.
