I don’t know what changed in my Apple Music app l, I still have everything and can find some playlists in the “recently played” section, but why can’t I see all of my playlists at once like I used to be able to? The folder for it is completely gone. It used to be under ‘songs’ or something.

It’s great to have you in the Apple Support Communities! I gather that you aren't seeing the playlist category when opening the Music app. I can help.
To add that category to the library, tap Edit, then select Playlists.
