We are looking to trade in our current phones and buy iPhone 11 through Apple. I see there’s an option to get the phone sim free - does this mean they could work with straight talk?

Yes, you can purchase an unlocked iPhone (the correct term, don't ask for SIM free) directly from Apple. Whether Straight Talk will accept it on their system is another matter, I would ask them prior to buying.
