My search engine kept changing from Google and after finding malware in System preferences/Profiles, I deleted the malware by clicking on the - symbol, but now the whole Profiles icon has gone. How can I find it again, in case I need to do the same again?

The Profiles icon is only shown whenever your Macintosh has a configuration profile installed. If there are no profiles installed then the Profiles icon will be hidden.
