I have both Catalina and Mojave on one disk. Can I just delete the Catalina volume labelled Macintosh HD?

Then you would need to remove Macintosh HD and Macintosh HD - Data to remove Catalina.

Good luck. I've never seen anyone do this.

I named the Mojave volume Mojave, so I have one volume named Macintosh HD.
