i currently have my phone service with MetroPCS. I really want a Apple Watch but i was curious if it is compatible and i can have the GPS+Cellular or if i have to have one that only works on wifi?

Ask MetroPCS direct.y about cellular+GPS coverage.
Or for using the watch without cellular, you can use a cellular+GPS without a contract. Or can use a GPS-only watch.
