Good question! I can't say what all goes wrong. But, for example, if you don't sign out of apple.com before the change, then you will have trouble signing in after the change if you already are signed in using your old Apple ID. I think the things that might happen could be classified more as annoyances that have to be overcome, rather than fatal errors.
