When are you going to give users the ability to turn off the task bar as it keeps interfering with games that use the bottom of the screen

No one here knows what Apple may or may not do, and speculation is prohibited. You can provide feedback to Apple detailing your desire for changes by going to Feedback - iPhone - Apple

In addition to echoing ChrisJ4203s comments, I would add that potential conflict will cease when Game (and other App) Developers optimally code their Apps for the target Operating System - in this case, iOS and iPadOS.

As such, you may wish to direct any feedback in this regard to the relevant App Developer(s).
