How to re-pair watch

For some reason, my phone froze. It took "forever" to finally get to the update / restore. I was able to restore my phone and even went to a backup. But, now my watch isn't paired. The watch works fine, it's just no longer paired with my phone. I have a 11 Pro Max and a 5 Watch. I've researched online to my ability, and can't come to any conclusion on how to re-pair without losing all my saved data on my watch. To be honest, the only thing that is saved I care about is the activity goals, and cycle tracking. I don't have photos or music on it. Is there a way to not have to start fresh?

I apologize if this makes no sense. I'm just frustrated and exhausted from trying to figure it out. Thanks in advance!

According to this article, the iPhone backup should contain a backup of the watch:

Back up your Apple Watch - Apple Support

On your iPhone if you tap Health and then Sources, do you see a watch backup there under DEVICES? If so, you can tap that backup and see what data such as Workouts is in that backup. Then when you re-pair your watch you should be able to restore that backup.

Update:

I gave up and erased data on the watch and started new. Now, the activity is frozen. The only way to see the rings is to use that particular watch face. Even then when you press it this comes up, same with just selecting activity. You can view the updates on ring movement on the phone. I get goal achievement alerts on the watch too. One award was sent but, the ring color on it is missing. It's just "engraved" on the back.
