how do I toggle velocity sensitivity on my midi keyboard in Logic Pro X???

I'd like to be able to toggle velocity sensitivity in Logic Pro X on my midi keyboard. I sometimes use an Xkey Air 37 and other times a Korg Nanokey Studio. But I haven't been able to figure out how to toggle the velocity sensitivity of the keys. I checked the Logic Pro X help menu and there seems to be info on this. Surely there must be a setting I'm missing. A setting that when toggled one way restores velocity sensitivity to your midi keyboard when you want it and allows you to switch it off when you don't want it.

You can get Logic to ignore velocities by going to the inspector window and setting MIDI dynamics to FIXED. This will playback all velocities at 64. You can offset it plus or minus with the velocity parameter.

Thank you very much for your help Data stream studio. But when I do that, it seems to have no effect. I'm trying to figure out how to turn the velocity sensitivity back on. Right now there's no difference no matter how softly or hard I hit the keys. Usually that's what I want. But right now I'd like to re-enable the touch sensitivity, and I haven't been able to do it.
