PhotoShop and Illustrator on 2020 Mac Mini

You would achieve better performance on Mac mini if you used an eGPU. Mac mini’s processor is very powerful however its internal graphics leave a lot to be desired.

Unless take the suggestions of using an external GPU, compared

to your current iMac, Photoshop and Illustrator will be quite

disappointing. You already have a discrete GPU with 4GB of GDRAM

(assuming you have the base model, better if you don't). The Mini

has the Intel Integrated graphics and shares system memory for

VRAM and limited to only 1.5 GB.

Historically, Adobe has shared what GPUs their applications will use if available. The Photoshop Nov 2019 (v21) system requirements indicate it prefers to discover higher-end nVidia GPU, and does not mention (any AMD GPU, including the AMD Radeon GPU) in the Black Magic eGPU boxes. The Illustrator Nov 2019 (there is a March 2020 update) System Requirements list the nVidia and AMD GPU supported in Windows, but don't bother with listing those expected for macOS.

With an external eGPU connected via Thunderbolt 3, the Core i7 option with its hyperthreading, minimum 32GB RAM, 1TB or more of flash storage, and you should have ample processor, IO, and GPU bandwidth to handle almost anything that you can thow at it with Adobe software. Add a 43 inch 4K TV with HDMI 2.0 cable from the Mac mini and you should have plenty of workspace too,
