I needed to use a wired headphone; so I purchased a lightning to 3.5mm connector and plugged it in. The audio on various music apps/audio books etc. work fine. However the phone does not work (with the wired headset - it works fine in bluetooth mode). Any idea what I need to do.

Get the adapter replaced with the one made by Apple and your Bose NC700 will function as designed.

Which headphones are you using? Are they made by Apple? Is the 3.5mm to Lightning adapter made by Apple? Are they also equipped with a microphone? I suspect that either your headphones or the adapter is probably not manufactured by Apple. Sometimes this mismatch causes limitations on one or more functions of the accessory.

Thx for reply. I am using a Bose NC700 headphone. The adaptor is NOT an Apple accessory.
