I use a Mac Pro (Mid-2012); run High Sierra. I've just installed a new internal 2TB hard drive in my Mac Pro.

Download of the software takes about an hour, depending on your Internet speed. Once downloaded, Installation takes a bit under an hour, and shows a progress bar and messages about what phase it has reached.
The default formatting process only re-writes the first 1000 blocks or so -- where the Directory will be placed. That can finish in about a minute.
If you choose the Zero the drive (using the first security ERASE setting) that takes all afternoon or longer.
Security ERASE for SSD drives is not helpful, and the security ERASE should be blocked for those drives. It adds wear and is never appropriate for SSD drives

I have 4 internal hard drives on my Mac Pro (Mid-2012).
I'm using HD #3 as my main HD until I format the new 2TB HD. When I boot up on HD #3, the menu bar font and the desktop folders are unbelievably huge!
BDAqua has you covered on overall font sizes. Choosing a different "Scaled" setting in displays preferences will change the TEXT scale-factor to enlarge added TEXT at a different rate. This helps with overall "tiny Text".
The desktop folder Icons and their labels are not at all intuitive.
In Finder, open the desktop folder and choose Icon display.
From the Finder's View menu, choose Show View Options. You get this box with its associated controls:

When you boot from a different drive, you will be using the settings saved in that copy of MacOS.
Changes like the ones you describe are not unexpected.
You are free to have a copy of MacOS on each drive, but that is not a requirement. You can have a drive with additional folders just for files, and have your boot drive separate.
That is the way the MacPro 2013 works -- the boot drive SSD is fast, but small. You can't possibly put all your files on it, so some needed to go on a data-only drive.
Try Sys Prefs>Displays Increase the resolution, or try CMD+ the minus key.
