Pages v5 (Oct 2013) thru the current Pages v10 do not support non-contiguous text selection.

In the Finder's icon view, you can use either the shift, or command key to select non-contiguous items. In the Finder list view, only the command key will allow non-contiguous selection. The shift key will automatically select everything from the first selection to the last selection.
