Can anyone advise if the 16” MacBook Pro headphone 3.5 output, is also an optical out? I believe this feature was removed in recent years, but has it been put back into the 2019 16” model?
Unfortunately no.
For that you have lots of options, but if you have a particular DAC in mind I'd start with the inputs it offers. Wired options would obviously require a USB adapter, but there are many to choose from. Start with the DAC which I surmise from your question offers a Toslink (optical) input but what else does it have?
Wireless options include AirPlay but neither AppleTV product offers an optical output any more. You might find an older model, or an equally old and outdated AirPort Express. They had optical also. But everything these days is wireless and HDMI.
