I write letters using notes. The name of the note always comes out as our return address. I want to give the letter an individual name, but I am unable to change the name of the note. does anyone know how. I'm using the latest OS

I understand that, but short of adding a line to the top of each letter I write with a unique identifier, I’m looking for a way to simply change the (my address) name that comes up every time I write a letter. I’d much rather ID the letter with the addressee name and date of the letter.

Then put that at the top of the letter.
Or, use something designed for writing letters. Textedit or Pages are both built in.
The first line of the Note is the Title.
