Apple ID

If I sign out of my Apple ID on settings then will my files, contacts, photos, apps and mails be deleted or removed.

They should remain on the device. If you are signing out of iCloud, some data may be removed, but should sync back the next time you sign in. If you get an option to keep the data on your device, choose yes.
