Did you actually do File > Export > epub and then open that file with the Books app? If not, try that and see if you get the same result. "Preview" can be misleading sometimes.
Where exactly does it look tiny? On what device?

I have been doing all my work on my MAC. I saw the tiny print on the epub previewer -- on my MAC.
Just to provide some context -- my "native" environment for documents is LaTex-generated PDF. I have recently written a children's book that I would like to publish as an Apple ebook. I am quite comfortable with setting up parameters in a LaTeX preamble -- but I have never done anything of that sort in PAGES or in EPUB.
