How do I put an existing phone number on a new sim card in an iPhone 8. I want to used the number that is currently on a Samsung Galaxy S5.

You talk to your cellular carrier about porting your iPhone, unless you are staying with the current carrier. Otherwise, that has to be handled by the carriers. You cannot have a SIM without that number on it and expect to magically get that number on it. Only the carriers can assign a number to a SIM.
