Would there be any issues between having an apple watch series 5 through Sprint and an iphone through at&t? The watch should drag every information from my iphone onto the watch without any issues, correct? Or do they both need to be through the same carrier?

If you intend to use the cellular functionality of the watch then yes that is a major problem, they must be the same carrier and account.
