I bought a Mac yesterday at Staples and wasn't offered apple care, I bought it through curbside pickup as the store was not fully open due to coved-19. I went online to purchase AppleCare today and the site said that my Mac is not eligible for the service. This does not make any sense to me as I just bought the Mac and should be able to purchase the coverage plan.

So exactly what year/model is this Mac? It may be "new", but it could have sat on the shelf for a year or more.
And, out of curiosity: I did not know that Staples sells Macs - I just went on their site and could not find any.

It does, Staples in Canada is an Apple Authorized Reseller, in the US they are not. Glad you got it sorted out, enjoy your Mac.
I live in Canada, I don’t know if that makes a difference. But I figured it out and the coverage has been purchased!
