iPhone SE without SIM/eSIM
Are all apps (except phone of course) functional without a SIM/eSIM card or do some require a SIM (or eSIM) card for full functionality?

A SIM card is required to activate the phone. Once activated you don’t need the SIM until reset to factory settings and set it up again.
