So since the catalina update, audiobooks have been a bit screw-y. I was glad they moved them to the Books app because it's great on my phone, but alas, it's messed up on mac.
Whenever I import an audiobook, it imports each chapter as a separate book:
since we've lost the option to edit metadata, is there anything I can do about this?

I share in your frustration. I'd finally had enough of not being able to have my audiobooks work they way they should. I sought out an answer, and your post got me to think differently.
I have found a fix through Adobe Bridge. After looking at the metadata for my audiobook titles, I discovered that it only had an artist listed in the audio section. I added an album title (the title of the audiobook), saved it, then added the audiobook back to the library. That worked for me.
I hope you are able to find a third-party application that will allow you to edit the meta data.
