I have an iPad 11 Pro (2020), I have connected a USB hub (the kind with a card reader, audio, and HDMI output). When the hub it attached, the iPad defaults to playing audio through the hub’s audio output. I’m unable to deselect it from the audio controls on the control center.
How can I set audio to use the iPad’s speakers while still using the hub?

You can't.
iPad/iPadOS automatically switches the audio source based on what is plugged into the USB-C port or if it is through Bluetooth.
There are no ways to manually alter or change these settings or system behaviour.
