Hi fellow Catalina users,
Pre-Catalina (OS Mountain Lion to High Sierra) Launchpad had an option to open Dashboard with items such as Calculator, Clock, Weather, Units Convertor (e.g. kilometres to miles).
Have I somehow removed Dashboard?

Apple has removed dashboard from Catalina.
