Transering data from a newer phone to an older phone

My iphone (11 Pro) was stolen at the beginning of this year and since then I have been borrowing my family’s old phones so that I can still use a phone. When I transferred over to an iPhone 8 all my data came with it, however this iPhone 8 stopped working a week ago and I was sent an iPhone 7. My problem is none of my data has restored onto this iPhone, if I go into iCloud backups it shows my backups I have from a day ago on the other phone yet the data is not on this phone yet. There’s lots of information on how to transfer data from an old phone to a new phone, but no information on the opposite. It would mean a lot if someone could help me with this! Thank you x
