I have just purchased an iphone 11, transferred everything over from the old phone to the 11.. worked well for about an hour and now when you touch on an app or even general it won't let you select anything. Switching on and off doesn't help at all.

It sounds like since restoring from your back up your phone is freezing when trying to do anything. For this I would suggest trying to erase your iPhone and set up as new.

When you set up a device as new any information that syncs with iCloud would return.
Settings>(your name)> iCloud, the options that are green will load.
If the issue persists I suggest contacting Apple Support
