Mail on iPad
Trash isn’t given as an option to Swipe Right or Left in Mail. How can I add it?

The left-swipe Delete action, within Mail, is (should) be present by default. Other left/right swipe actions can be defined - but the default Delete action is not configurable:
Settings > Mail > Swipe Options
Additionally, for each of your email accounts, you can choose how “discarded” messages are handled - either directing an email to the Deleted or Archive mailbox folder:
Settings > Passwords & Accounts > [email account] > [account] > Advanced
