You can connect Bluetooth devices other than the phone, I used my AirPods yesterday with my Watch. If you are trying to connect to your cars audio system you will need to put the head unit of the car in discovery mode and then go to Settings > Bluetooth on your Watch, look for the car device and tap connect.
