I can’t deregister an old number and don’t have the sim or phone. How do I replace it with my new number? I’ve tried all sorts from the help pages.

Where are you trying to deregister the number? You may need to change the number on your Apple ID. After the change, allow up to 24 hours for the change to sync. Before trying to make the change, sign out of Messages/FaceTime.
Isn't it automatic? I mean when you have a new SIM and you put that on your phone, the new number should be automatically be recognized by the iPhone.
Please correct me if I'm wrong.
