Is there no simple, one-touch way to arrange apps alphabetically??

You may try resetting the home screen layout in settings but this will remove any folder that you created.

I can recreate folders, if the reset will organize alphabetically. Evidently to have a simpler method that also preserves folders is unimportant to IOS designers.
