I just performed the 6.2.6 update for my watch. I still did not see the new Pride gradient.

you add faces by going to the watch app on your iphone, clicking Face Gallary, choosing the face you wish to add and click it and then click the add button under the name of the face.
if I scroll down a bit in the Gallery to the category called pride I have that too both as cicular and fullscreen like your screenshot
