How do you disable the sorting (checked items go to bottom) once it's been turned on on Mac?

After recent Catalina update I started using new checklist feature in my Notes app. I opted to "enable sorting" which puts the checked off items at the bottom of the list. However, I want to reuse the list each day so I'd rather the order of things not get all jumbled. I'd like to turn off the sorting option on my Mac but I'm not seeing how to do so. Haalp.
