I had trouble with iCloud and want to turn it off before I set up my new MacBook Pro. How do I let it know I do not want the documents I am putting on the new computer to immediately go into iCloud?

When you set up you rnew Mac there is a click through option to enable iCloud Drive.
You do not have to use iCloud Drive— uncheck the box.
