I have a solution that worked for me.
Quick answer:
I deleted all plugins that ended with 'x64' from the Components folder (HD>Library>Audio>Plug-Ins>Components)
In my case they were:
And it worked! Although it still takes about 1/2-2 minutes to load Logic every time. Before the update it was only a matter of a few seconds. Which means Apple still has to address the lengthy plugin rescan process on every single launch with this new 10.5.1update.
How I figured out that those files were bricking my Logic?

I don't have any illegally acquired or 'cracked' plugins installed
I have the same issue and I agree that it is a nightmare and I wish I had a solution! I tried to start the program last night before I went to bed and when I woke up this morning the little Beachball was still spinning and telling me that it was searching for the plug-ins!
I think that I possibly did not remove enough. I had plug-ins from Kontakt, Izotope, and PianoTeq. I only removed the portion that seemed to be embedded in my Logic files. So I have now removed all of those separately, just for existing on my drive, having nothing to do with Logic. Again, I removed my main Logic Application and I feel that I have gotten rid of anything on my computer that could be incorporated into Logic later. I went back and downloaded Logic and I’m just now running it and I see no change, as it still seems to be in the endless loop of letting me know that it is updating the audio unit plug-in information. I’m willing to wait for an hour or two but I’m afraid that if this continues until I’m ready to go to bed, which will be in six or seven hours, then I really don’t have any other ideas?
If I hadn’t had everything working perfectly with Logic 10.5 then I might agree that it’s possible that my system is too old, but with four years of perfect operation and then everything crashing with a one decimal point upgrade it’s difficult to believe that my four year old MacBook Pro is suddenly insufficient. I am still going through the long arduous process of completely starting from the ground up with the re-installation of Catalina, followed by the meticulous installation of each application that I had removed. It seems like it should work, but I’m also suspicious that I shouldn’t have had to go through all of this, that I have never had a previous problem.
I use very few of the Logic plug-ins but one could possibly use them and then swap them out for the third party ones later. As I stated, I do still have Logic 10.4.8 working, hopefully. So that should work best for me as I won’t be using the new tools added In 10.5 except for maybe the samplers.
Same issue for me. Even when I get to the end of the scanning, the next time I boot, it’s the same again. Verify the plugins each time!!! Crazy Apple. On to another DAW. I can’t handle the stress from it. They need a fix.

I feel lucky in that my Logic is still working fine, and the workaround I have to perform EVERY TIME I NEED TO USE LOGIC is thankfully short and easy.
because it sounds as if there are users out here spending HOURS of their own valuable time doing Apple's work for them (for free obvi).
seriously, Apple, we desperately need you to be looking at this and letting us know how long this is going to take for a fix. talk to us!

I fear that those of us on older systems, (pre 2019) are being aged out spending on what OSX you are running.
It seems that mostly Mojave users on "older" Macs were running into this issue- but I have seen Catalina users (on older computers) were having this issue as well... Who here thinks Apple won't fix this for us?
I have issues with logic loading up and also a few plugins wouldn't work , had an issue with Nicky remero kick (not kick2) got kick 2 working but I have projects which iv used this on and can't load it with kick2 as it doesn't have the patches
Had this happen to me this morning...the beach ball when opening logic x. So I found this discussion page this morning. Today is July 11th, 1 month after these postings...and no new postings or info or fix? Are you kidding me? This is nonsense. I’ve been debating for quite awhile about moving to Studio One or Pro Tools and if this isn’t rectified rather soon I’m done with Logic...which is a shame because it has some great features (and I’m used to it). But if it takes over a month to get a fix just to make it usable then something is really wrong here. Even the month old suggested workarounds can’t be tried because you can’t open logic to begin with! A month? Really?

This may true for some but for others the beach ball will be spinning even if left over night. My issue actually began while in Logic as I was getting an error message about certain AU plug-ins. Then it progressed to the never ending beach ball.
