Why has the music I had down loaded disappeared since I opted out of the subscription- I had been paying for at least a couple of years at $11.99 a month so why don’t I get to keep the music??

Because Apple Music is a rental subscription service. You get practically unlimited access to the entire Apple Music catalogue for the duration of your subscription. Once you end it you're back to your ripped and purchased music.
