Thank you for reaching out on the Apple Support Communities. If we understand correctly, your Activity app on your iPhone isn’t updating with the data on your Apple Watch.
Is the Activity app saving any new data at all? If not, do you have Health enabled at Settings > [your name] > iCloud > Health on your iPhone? You’ll need this enabled for the Activity app to save data.
Otherwise, try these steps.
Update your iPhone, iPad, or iPod touch - Apple Support
Update your Apple Watch - Apple Support
If it still isn't syncing after ensuring both devices are updated, try this:
Unpair and erase your Apple Watch - Apple Support
Set up your Apple Watch - Apple Support
Make sure you’re using iCloud as your backup option before you unpair your Apple Watch. This will ensure all of the encrypted data on your Apple Watch is part of the backup.
