If it has a Catalina compatible driver, then it will work with your computer. Whether it's a good match is something you should be researching.
Epson Perfection V600 appears to support Catalina, but that’s not entirely clear.
Check with Epson for the official answer.

Brother has multi-function printers with integrated scanners with Catalina compatibility, and there are other alternatives.
Except that VueScan expects compatible V600 drivers already installed before it will support this scanner. If no Epson Catalina driver support, then no VueScan either.
If nothing else I've used VueScan for decades on dozens of different scanners...

I am sure that Epson will tell me that it does support the Catalina. I would like to hear from someone who is actually used it to see if they have any problems. I will do more research on Monday.
You’re maybe approaching this backwards? If the vendor doc is this problematic before the sale and for support information an operating system version that’s been available for ~eight months production and yet longer with the preceding beta, what happens after the sale?
How can I know if it has a Catalina compatible driver before I buy it? None of the info that I have found covers this.
