I've backed up my iPhone into itunes on my PC, and i got the indication that the Backup is complete, but i can't find any Photos or any folders containing anything from that Backup on the PC, and i'm quite anxious.. so how can i see/find these data ?

Thank you.. and i could see the Backups already,
but what if i got to delete couple of photos or videos from the phone to free up some space, and then later on needed to watch them, is there a way to do so in iTunes?

Again, no.
As I said earlier, the backup is an archive, not a flat file system to be viewed.
If you restore a backup at a future date, you are going back in time to that date and overwriting all content on your phone at the time of the restore.
Freeing up space is not something a backup is designed to do.
Freeing up space means remove content.
iTunes creates an archive of your data and you can't directly view its contents.
In iTunes, go to preferences > devices to see created backups.
